This crockpot shredded BBQ chicken recipe is healthy, delicious, and so easy to make.  Simply combine all of the ingredients in your crockpot or freeze them in a plastic baggie (raw), so you’ll have a meal on-hand for busy weeknights.  We’ve been making this recipe for years and my whole family loves these sweet and tangy sandwiches.  Enjoy!

 

Crockpot Shredded BBQ Chicken

Ingredients:

  • 2 pounds boneless skinless chicken breasts
  • 1 cup ketchup
  • 2 tablespoons Worcestershire
  • 1 tablespoon light brown sugar
  • 1 tablespoon chili powder
  • 2 teaspoon curry powder
  • 1 teaspoon hot sauce
  • Sandwich buns

 

Directions:

  • Add all ingredients to your crockpot and cook on “low” setting for 6-8 hours.
  • Shred chicken and stir.
  • Serve on sandwich buns with homemade mango coleslaw (recipe below).

 

Directions to freeze and cook later:

  • Label a gallon-sized plastic freezer bag with the name of the recipe, cooking instructions, and “use-by” date.  
  • Add all ingredients, remove as much air as possible, seal, and freeze for up to three months.
  • When ready to eat, thaw overnight in the refrigerator or in the morning in water.  Follow cooking instructions above.

Serves 8

  • 2 teaspoon curry powder ($0.47 when purchasing a 3 oz bottle for $4.99)
  • 1 teaspoon hot sauce ($0.03 when purchasing a 12 oz btl for $1.79)
  • Sandwich buns ($2.99 when purchasing pack of 8)

Total recipe cost (8 servings): $9.83

Cost per serving: $1.23

Mango coleslaw

Ingredients:

  • 16oz bag of shredded green cabbage and carrots (coleslaw mix)
  • 1 mango, peeled and shredded (about one cup)
  • 1 cup mayonnaise
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

 

Directions:

  • Mix all ingredients in a large bowl.  If you want, you can prepare the day ahead of time and store in the refrigerator.

Serves 8

  • 16oz bag of coleslaw mix ($2.09)
  • 1 mango, peeled and shredded ($0.99)
  • 1 cup mayonnaise ($0.80 when purchasing a 30 oz jar for $2.99)
  • 1 tablespoon honey ($0.17 when purchasing a 12 oz jar for $2.79)
  • 1 teaspoon apple cider vinegar ($0.01 when purchasing a 32 oz btl for $1.99)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Total recipe cost (8 servings): $4.06
